Brewing a Wit: Mashing in 5% of the grist for a lactic mash. Mashing at 70ºC. After infecting the mash at 50ºC, it is kept at 42ºC by hanging it in the water in the HLT set at 42ºC for two days (pH goes from 5.8 to 3.8)
